A recipe for Tori, and another pic...


So, I wanted to get a pic of the color of this jelly. And yes, it did gel. I'm very happy with it. DD said this morning that she couldn't taste the crab-apples in it. I told her that they were what makes it so tart. LOL
Other than that, Tori asked for some of my recipes, so here's an easy one to start with. It's from the back of the Alber's Yellow Cornmeal box.
Alber's Sweet Corn Muffins/Bread
1-1/2 c all purpose flour
1/2 c yellow corn meal (though I usually use 1 cup flour & 1 cup cornmeal, just my personal preference)
2/3 c granulated sugar (I use this amount or less depending on my mood)
1 Tbsp baking powder
1/2 tsp salt
1-1/4 c milk
2 large eggs, lightly beaten
1/3 c vegetable oil
3 Tbsp butter or margarine
Preheat oven to 350 deg. F. Grease or paperline 18 to 20 muffin cups (or an 8"x8"x2" baking pan).
Combine flour, sugar, cornmeal, baking powder and salt in medium bowl. Combine milk, eggs, vegetable oil and butter in small bowl; mix well. Add liquid mixture to flour mixture; stir just until blended (may be a bit lumpy still). Pour into prepared muffin cups, filling 2/3 full.
Bake for 18 to 20 minutes (35+- minutes if baking as bread instead of as muffins) or till tests done). Cool in pan on wire rack for 5 minutes before removing from pan & allowing to continue cooling slightly. Serve warm with butter & honey.
Hopefully tomorrow I'll have time to post my French Dip and Swiss Chard recipes (that's what we had for dinner last night).

Had to chuckle this morning, DD and I were both woken at about 6 am by a flock of geese flying low over the house, from the loud sounds of their honking. I really thought all the geese had flown south by this point. Evidently there are still some slow-pokes hanging around. LOL But, BOY were they loud. Even with all the windows shut on the house you could hear them plain as day. Or, maybe they'd landed on the roof in order to get their bearings. *wink* They sounded that loud, anyway.

Hope those slow-poke geese hurry up and fly south before it gets too cold.

I am so glad your jelly jelled. The color is fantastic. It makes my mouth water!

I have noticed the geese heading out earlier than normal here, too. Think it means anything? or is global warming messing up their clocks along with everything else?

You know, half the time when I come here I leave hungry. ;-)

I think the geese were still there because fall keeps coming later and later.
